Discard Recipes 

Sourdough Discard Energy Bites

Ingredients:


ā€¢ 1 cup sourdough discard

ā€¢ 1 cup oats

ā€¢ 1/2 cup nut or seed butter (like almond or sunflower)

ā€¢ 1/4 cup honey or maple syrup

ā€¢ 1/4 cup mini chocolate chips or dried fruit

ā€¢ 1/4 cup chopped nuts or seeds (optional)

ā€¢ 1 teaspoon vanilla extract


Instructions:


1. In a large bowl, mix together the sourdough discard, oats, nut or seed butter, honey or maple syrup, and vanilla extract until well combined.

2. Fold in the mini chocolate chips or dried fruit and chopped nuts or seeds if using.

3. Refrigerate the mixture for about 30 minutes to make it easier to handle.

4. Once chilled, roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

5. Store the energy bites in an airtight container in the refrigerator for up to a week or freeze for longer storage.

Sourdough Discard Veggie Muffins

Ingredients:


ā€¢ 1 cup sourdough discard

ā€¢ 1 cup all-purpose flour

ā€¢ 1/2 cup grated cheese (cheddar, mozzarella, or your choice)

ā€¢ 1/2 cup finely chopped vegetables (such as bell peppers, spinach, or zucchini)

ā€¢ 1/4 cup grated carrot

ā€¢ 1/2 teaspoon baking powder

ā€¢ 1/2 teaspoon baking soda

ā€¢ 1/4 teaspoon salt

ā€¢ 1/4 teaspoon black pepper

ā€¢ 1 egg, beaten

ā€¢ 1/4 cup milk


Instructions:


1. Preheat your oven to 375Ā°F (190Ā°C) and line a muffin tin with paper liners or lightly grease the cups.

2. In a large bowl, combine the flour, baking powder, baking soda, salt, and pepper.

3. In another bowl, mix together the sourdough discard, beaten egg, and milk until well combined.

4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the cheese and chopped vegetables.

5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

6. Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

7. Let the muffins cool slightly before serving. Store leftovers in an airtight container for up to a week.
