Discard Recipes 

Sourdough Discard Cucumber Yogurt Bread

Ingredients:


ā€¢ 200g sourdough discard

ā€¢ 300g bread flour

ā€¢ 100g whole wheat flour

ā€¢ 200g grated cucumber, excess water squeezed out

ā€¢ 150g plain yogurt

ā€¢ 10g salt

ā€¢ 5g sugar

ā€¢ 100g water (adjust as needed)

ā€¢ 1 tsp instant yeast (optional, for extra rise)


Instructions:


1. In a large bowl, mix sourdough discard, grated cucumber, yogurt, and water.

2. Add flours, salt, and sugar. Mix until combined into a shaggy dough.

3. Knead the dough for about 10 minutes until smooth and elastic. If using, incorporate instant yeast during kneading.

4. Place the dough in a greased bowl, cover, and let it rise at room temperature until doubled in size, about 2-3 hours.

5. Preheat your oven to 220Ā°C (425Ā°F). Shape the dough into a loaf and place it on a baking sheet lined with parchment paper.

6. Let the loaf rise again for 1 hour. Just before baking, score the top of the loaf with a sharp knife.

7. Bake for 30-35 minutes, until the crust is golden brown and the bread sounds hollow when tapped on the bottom. Let cool before slicing.

Sourdough Discard Cucumber Yogurt Pancakes

Ingredients:


ā€¢ 200g sourdough discard

ā€¢ 100g all-purpose flour

ā€¢ 1 tsp baking soda

ā€¢ 1/2 tsp baking powder

ā€¢ 1/4 tsp salt

ā€¢ 1 tbsp sugar

ā€¢ 1/2 cup plain yogurt

ā€¢ 1/2 cup grated cucumber, excess water squeezed out

ā€¢ 1 egg

ā€¢ 2 tbsp melted butter

ā€¢ Optional: fresh mint leaves for garnish


Instructions:


1. In a mixing bowl, combine sourdough discard, flour, baking soda, baking powder, salt, and sugar.

2. In another bowl, whisk together yogurt, grated cucumber, egg, and melted butter.

3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

6. Serve warm, garnished with fresh mint leaves if desired, and accompanied by yogurt and additional grated cucumber.
