Discard Recipes 

Sourdough Pizza Rolls

Ingredients:

1 cup sourdough discard

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¼ cup olive oil

½ cup tomato sauce

1 cup shredded mozzarella cheese

Assorted toppings (such as pepperoni slices, sliced bell peppers, olives, etc.)

Instructions:

Preheat your oven to 375°F (190°C) and grease a muffin tin.

In a large mixing bowl, combine the sourdough discard, flour, baking powder, baking soda, salt, and olive oil. Stir until a dough forms.

Divide the dough into 12 equal portions and press each portion into the wells of the muffin tin, forming a small cup shape.

Spoon a tablespoon of tomato sauce into each dough cup, then sprinkle with shredded mozzarella cheese and your desired toppings.

Bake in the preheated oven for 15-18 minutes, or until the pizza rolls are golden brown and bubbly.

Remove from the oven and let cool for a few minutes before serving. Enjoy these delicious and customizable pizza rolls!

Sourdough Banana Muffins

Ingredients:

1 cup sourdough discard

1 cup mashed ripe bananas (about 2-3 bananas)

½ cup granulated sugar

1 egg

¼ cup melted butter or vegetable oil

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

Optional: chopped nuts, chocolate chips, or dried fruit for added texture

Instructions:

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large mixing bowl, combine the sourdough discard, mashed bananas, sugar, egg, melted butter or oil, and vanilla extract. Mix until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

If desired, fold in chopped nuts, chocolate chips, or dried fruit.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely. Enjoy these moist and flavorful banana muffins as a tasty snack or breakfast treat!
